From the Graminaceae family, it is an annual herbaceous plant that can reach a height of 1-1.5 meters. The origin of its cultivation is ancient, and dates back to prehistoric times. In Italy its production has always been decreasing, because it was used only for feeding birds. Recently rediscovered for its precious nutritional properties.

Millet: nutritional characteristics

Very rich in minerals, in particular iron that can be assimilated by the human body, magnesium, phosphorus and silicon. It also contains vitamin A and many B vitamins.

Being naturally gluten-free, it is an excellent food for celiacs and gluten intolerant.

It supports the well-being of the gastrointestinal system and the health of nails and hair.

Mile: use

Hulled millet:

 

cold salads, flans, meatballs, soups, side dishes, biscuits, croquettes, pies, vegetable milk.

Flour:

 

preferably mixed with wheat flour (or other cereal), it can be used for bread and bakery products, sweet and savory cakes, biscuits, gnocchi, breading, polenta and crepes. It has the virtue of making the dough very soft and aromatic.
